The Viking Blue Carbon Steel Fry Pan is perfect for those who like cooking with cast iron, but love the versatility of a clad stainless steel pan. With blue carbon steel you will have a pan that is noticeably lighter than cast iron, without sacrificing performance. The heat treatment process used to create blue carbon steel helps resist rust and corrosion, a nuisance that can plague traditional cast iron pans. Blue carbon steel achieves high temperatures quickly and evenly and is safe to 600F degrees. Like cast iron, these pans will need to be seasoned regularly to maintain its non-stick properties. Fry Pan is constructed of carbon steel with a stay-cool cast iron handle, securely attached to the pan with heavy duty rivets for durability and a lifetime of use. Please note that the acids in foods will cause the pan to change color ( discolor) during use and over time. This is normal and expected with carbon steel as the food interacts with the natural raw material and means the pan is working for you just as it should. To season the pan before first use, we recommend using very hot water and dish soap to scrub the pan, then wipe dry and place it on a burner at low heat to finish drying. Add some oil to the pan and cook over medium heat for about 10 minutes. Then, let the pan cool and wipe with paper towels. Your pan is now seasoned and ready for use. For future maintenance, simply rinse the pan with water after use and scrub gently with a soft bristle brush or sponge if necessary ( No soap needed!) Season with vegetable oil periodically to maintain the smooth cooking surface and non-stick properties. Should you find rust on the pan, like natural cast iron, this can be normal. Just clean the rust off with a scrubby sponge and season the area with vegetable oil. Like cast iron, when properly maintained, they will provide a lifetime of use.
